Directions
Prepare the steak marinade. Add all ingredients to a medium bowl and whisk until well combined. Pat the steak dry with paper towels and add to a large ziplock bag. Pour the marinade over the steak and remove all air from the ziplock and zip shot. Flip it over a few times to fully coat the steak. Leave at room temperature for 30 minutes or up to overnight in the refrigerator.
When you’re ready to cook the steak, preheat a cast iron skillet to medium high heat. Cook the steak to your desired level of doneness - we prefer 4 minutes on each side. Remove from heat and let rest on a cutting board. Use a meat thermometer to ensure the steak has reached the appropriate temperature. When cooled enough to handle safely, slice the steak into one inch thick pieces.
Make the salad dressing. Blend all ingredients with an immersion blender, regular blender, or food processor, until smooth. If you like a creamier dressing add more mayo - if you want a thinner dressing, use less mayo.
Assemble the salad. Add all salad ingredients to a bowl with the sliced steak and finish with a drizzle of dressing. Enjoy!
